It was every foodie’s favorite time of year… Thanksgiving!  I served appetizers in a game form as usual- celebrating trips my family made that year.  See below (ignore my stank eye, bad photography Joe). 🙂

Chia Seed Pudding +Raspberries +Hazelnuts +Drizzled Agave Nectar

My workday breakfast of choice… chia seed pudding parfaits!  This healthy light option has so many nutrients in it.  I whisk 2% greek yogurt (I can’t do 0% greek yogurt, it tastes chalky to me), almond milk, vanilla bean paste + chia seeds in a bowl and let them sit overnight.  Sometimes I drizzle agave nectar on top, depending how sweet the fruit I put in it is.

Zucchini Feta Fritters

I love savory breakfasts (which usually include bacon!) but here’s a lighter option, zucchini feta fritters.  It has flour (sorry GF folks) but with yogurt and veggies the breakfast is a non- greasy option which leaves you feeling full.  Recipe below:

Light  & crispy

Light & crispy

2 medium zucchinis
1 pinch salt & pepper
2 eggs
1/2 c flour
2 shallots diced
1 tablespoon garlic
1/4 c feta

1-2 tablespoons greek yogurt
1-2 tablespoons feta
1/4 tablespoons diced tomatoes
1-2 tablespoons chives

1. Shred zucchini with grater.

2. Combine egg, flour, onion, garlic, salt and pepper. Mix well then add in zucchini and feta.

3. Heat skillet on medium high and spray nonstick spray or butter. The batter is thick so spread and shape it evenly. Flip after about 2 minutes or when the batter starts to bubble.
4. Top pancakes with 1 tablespoon yogurt, chives, feta, and tomato.

Perhaps my favorite Saturday is waking up for a long jog & thinking about what I’ll make for breakfast during it.   Below is one of my favorite recipes:
